Ingredients:
4 large russet potatoes, peeled and cut into chunks
1/4 cup unsalted butter
1 large onion, thinly sliced
2 cloves garlic, minced
1/2 cup sour cream
1/4 cup heavy cream (or milk)
1/2 cup shredded Gruyère cheese (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the Potatoes:
Place the peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until potatoes are fork-tender.
Drain and return the potatoes to the pot.
Caramelize the Onions:
While the potatoes are cooking, melt the butter in a skillet over medium heat.
Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes, until they are golden brown and caramelized.
Add the minced garlic and cook for another 2 minutes until fragrant. Remove from heat.
Mash the Potatoes:
Mash the cooked potatoes using a potato masher or a hand mixer until smooth.
Add the sour cream, heavy cream, and half of the caramelized onions. Stir to combine.
If using, fold in the shredded Gruyère cheese. Season with salt and pepper to taste.
Serve:
Transfer the mashed potatoes to a serving dish and top with the remaining caramelized onions.
Garnish with freshly chopped parsley for a burst of color.
