Ingredients:
4 boneless, skinless chicken breasts (pounded to even thickness)
1/4 cup olive oil
1/4 cup lime juice (about 2 limes)
2 tbsp fresh cilantro, chopped
1 tbsp honey
1 tbsp lime zest
3 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
Directions:
Marinate the Chicken: Whisk together olive oil, lime juice, cilantro, honey, lime zest, garlic, cumin, smoked paprika, chili powder, salt, and pepper in a bowl. Place chicken in a sealable plastic bag or shallow dish and pour the marinade over it. Let the chicken marinate for at least 30 minutes or up to 8 hours in the refrigerator.
Cook the Chicken: Heat a large skillet or grill over medium-high heat. Remove the chicken from the marinade and shake off any excess. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Serve: Let the chicken rest for 5 minutes before slicing. Garnish with fresh cilantro and lime wedges.
