Famous Red Lobster Shrimp Scampi

Ingredients:

1 lb medium shrimp, peeled and deveined
1 tablespoon pure olive oil
2 tablespoons garlic, finely chopped
1 1/2 cups white wine (Chardonnay recommended)
Juice of 1/2 fresh lemon
1 teaspoon Italian seasoning
1/2 cup softened butter
1 tablespoon parsley, chopped
1/2 cup grated Parmesan cheese

Directions:

Prepare the Shrimp:

Pat the shrimp dry with paper towels and set aside.

Sauté the Garlic:

In a large skillet, heat the olive oil over medium heat.
Add the finely chopped garlic and sauté until fragrant, about 1-2 minutes.

Cook the Shrimp:

Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes on each side. Remove the shrimp from the skillet and set aside.

Prepare the Sauce:

In the same skillet, pour in the white wine and lemon juice. Stir in the Italian seasoning.
Bring the mixture to a simmer and let it reduce by half, about 5-7 minutes.

Finish the Sauce:

Reduce the heat to low and stir in the softened butter until melted and well combined.
Add the cooked shrimp back to the skillet and toss to coat them in the sauce.
Stir in the chopped parsley and grated Parmesan cheese.

Serve:

Serve the shrimp scampi hot, garnished with additional parsley and Parmesan cheese if desired.
