Tater Tot Breakfast Casserole
A hearty and delicious breakfast casserole made with crispy tater tots, sausage, eggs, and cheese. Perfect for a family breakfast or brunch!
Ingredients:
1 bag frozen tater tots (32 oz)
1 lb breakfast sausage
1 onion, diced
1 bell pepper, diced
8 large eggs
2 cups shredded cheddar cheese
1 cup milk
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1/4 cup green onions, chopped (optional)
Directions:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a skillet, cook the breakfast sausage over medium heat until browned. Drain the fat, then set the sausage aside.
In the same skillet, sauté the onion and bell pepper until softened, about 5 minutes.
In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
Add the cooked sausage, sautéed vegetables, and 1 1/2 cups of shredded cheddar cheese to the egg mixture. Stir to combine.
Pour the mixture into the prepared baking dish and spread evenly.
Arrange the frozen tater tots on top of the egg mixture in a single layer.
Bake in the preheated oven for 40-45 minutes, or until the eggs are set and the tater tots are golden brown.
Sprinkle the remaining cheddar cheese over the top and bake for an additional 5 minutes, until the cheese is melted.
Garnish with chopped green onions if desired. Serve hot.
