Crispy and Flavorful Long John Silver’s-Style Batter for Perfectly Fried Fish

Ingredients:

1 cup all-purpose flour
1/2 cup cornstarch
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 cup cold sparkling water or club soda
Vegetable oil (for frying)

Directions:

In a large bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
Gradually add cold sparkling water or club soda to the dry ingredients, stirring gently until just combined. The batter should be lumpy but smooth. Do not overmix.
Heat vegetable oil in a deep fryer or large skillet to 375°F (190°C).
Dip your fish fillets or other items into the batter, allowing excess to drip off.
Carefully lower the battered items into the hot oil and fry in batches until golden brown and crispy, about 4-5 minutes per side.
Remove from oil and drain on paper towels. Serve immediately.
