Low-Carb Cheeseburger Casserole

Ingredients:

1 lb ground beef
1 small onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
2 cups shredded cheddar cheese
1 cup mozzarella cheese, shredded
3 eggs
½ cup heavy cream
1 tsp mustard
Salt and pepper, to taste
Fresh parsley, chopped (optional)

Instructions:

Preheat oven to 375°F (190°C).
Brown ground beef with onion, garlic, and bell pepper in a skillet. Drain excess fat.
Stir in diced tomatoes, salt, and pepper. Simmer for 5 minutes.
In a bowl, whisk together eggs, heavy cream, and mustard.
Spread beef mixture in a casserole dish, sprinkle cheddar and mozzarella cheese on top.
Pour egg mixture evenly over the casserole.
Bake for 25-30 minutes until cheese is melted and bubbly.
Garnish with parsley and serve.

Notes:

For added crunch, top with crumbled bacon before baking!
