Roast over mashed potatoes feast

Ingredients:

For the Pot Roast:

3-4 lb beef chuck roast
2 tbsp olive oil
Salt and black pepper to taste
1 large onion, chopped
3 cloves garlic, minced
3 carrots, peeled and cut into chunks
3 celery stalks, cut into chunks
1 cup beef broth
1 cup red wine (optional, can use extra beef broth)
2 tbsp tomato paste
2 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
For the Mashed Potatoes:

4 large russet potatoes, peeled and cut into chunks
1/2 cup milk (more if needed)
1/4 cup unsalted butter
Salt and black pepper to taste

Instructions:

Prepare the Pot Roast:

Preheat your oven to 325°F (163°C).
Season the beef chuck roast generously with salt and black pepper.
Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.
Cook the Vegetables:

In the same pot, add chopped onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
Stir in the tomato paste and cook for an additional 2 minutes.
Deglaze and Braise:

Pour in the beef broth and red wine (if using). Scrape up any browned bits from the bottom of the pot.
Return the seared roast to the pot.
Add dried thyme, dried rosemary, and bay leaves.
Bring the liquid to a simmer, then cover the pot with a lid and transfer it to the preheated oven.
Bake for 3-4 hours, or until the roast is tender and easily shreds with a fork.
Prepare the Mashed Potatoes:

While the roast is cooking, place the potato chunks in a large pot and cover with water. Bring to a boil over high heat.
Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Add milk and butter. Mash until smooth and creamy. Season with salt and black pepper to taste. Add more milk if needed to reach desired consistency.
Serve:

Remove the pot roast from the oven and let it rest for 10 minutes before shredding or slicing.
Serve the pot roast over a bed of mashed potatoes, spooning some of the cooking liquid and vegetables over the top.
