Ingredients:

1 lb smoked Polish sausage, sliced into rounds
4 large potatoes, peeled and sliced into thin rounds
1 large onion, thinly sliced
2 tablespoons vegetable oil or butter
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley, chopped for garnish (optional)
Instructions:
Prepare the Sausage:

Cook the Sausage: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced Polish sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set it aside.
Prepare the Potatoes and Onions:

Cook the Potatoes: In the same skillet, add the remaining tablespoon of oil. Add the sliced potatoes and cook over medium heat, stirring occasionally, until they start to brown and become tender, about 15-20 minutes.
Add the Onions: Add the sliced onions to the skillet with the potatoes. Season with smoked paprika, garlic powder, salt, and pepper. Continue to cook, stirring occasionally, until the onions are caramelized and the potatoes are fully cooked, about 10 more minutes.
Combine and Serve:

Mix in the Sausage: Add the browned Polish sausage back to the skillet with the potatoes and onions. Stir everything together and cook for an additional 2-3 minutes to heat through.
Garnish and Serve: Garnish with chopped fresh parsley if desired. Serve hot.
