Ingredients:

For the Chicken:
4 boneless, skinless chicken breasts (or thighs)
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp dried thyme
Salt and pepper to taste
2 tbsp unsalted butter
2 cloves garlic, minced (optional)
Fresh parsley, chopped (for garnish)
For the Mashed Potatoes:
2 lbs Yukon Gold or Russet potatoes, peeled and chopped
1/2 cup unsalted butter
1/2 cup heavy cream (or milk)
1/4 cup sour cream (optional for extra creaminess)
Salt and pepper to taste
Fresh parsley or chives for garnish

Instructions:

For the Chicken:
Season the Chicken: In a small bowl, mix together the garlic powder, onion powder, paprika, dried thyme, salt, and pepper. Rub the seasoning mix all over the chicken breasts.

Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.

Optional Garlic Butter Sauce: In the same skillet, add 2 tbsp butter and minced garlic. Sauté the garlic for 1-2 minutes until fragrant, then drizzle the garlic butter over the cooked chicken.

For the Mashed Potatoes:
Boil the Potatoes: Bring a large pot of salted water to a boil. Add the chopped potatoes and cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain the potatoes and return them to the pot.

Mash the Potatoes: Add the butter, heavy cream, and sour cream (if using) to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

Serve:
Assemble the Dish: Serve the cooked chicken breasts alongside a generous portion of mashed potatoes. Garnish with fresh parsley or chives for a pop of color.
Helpful Tips:
Crispier Chicken: For extra crispy chicken, you can sear the chicken in the skillet and finish it in a 400°F (200°C) oven for 10 minutes.
Make It Creamier: Add extra butter or cream to the mashed potatoes for a richer texture.
