Philly Cheesesteak Baked Potato

Ingredients:

4 large russet potatoes
1 lb sirloin steak, thinly sliced
1 tbsp olive oil
1 green bell pepper, sliced
1 small onion, sliced
2 cloves garlic, minced
Salt and black pepper to taste
1 cup provolone cheese, shredded (or cheese of choice)
1 tbsp Worcestershire sauce
Fresh parsley, chopped (for garnish)

Instructions:

Preheat the Oven:

Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water, then poke several holes in each potato with a fork. Rub them with a little olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.

Cook the Steak:

While the potatoes are baking, heat olive oil in a large skillet over medium-high heat. Add the thinly sliced sirloin steak, seasoning with salt and black pepper. Cook for about 3-4 minutes, or until browned. Remove the steak from the skillet and set aside.

Sauté the Vegetables:

In the same skillet, add the sliced green bell pepper and onion. Sauté for about 4-5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant. Stir in the Worcestershire sauce and return the cooked steak to the skillet. Mix everything together and cook for another 1-2 minutes.

Prepare the Potatoes:

Once the potatoes are done baking, remove them from the oven and let them cool slightly. Carefully slice each potato in half lengthwise and fluff the insides with a fork.

Assemble the Baked Potatoes:

Divide the steak and vegetable mixture evenly among the potato halves. Top each potato with a generous amount of shredded provolone cheese.

Melt the Cheese:

Return the loaded potatoes to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve:

Remove from the oven and garnish with fresh parsley before serving.
