Smothered Beef and Potatoes Casserole
Ingredients
For the Beef:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1 egg
1 teaspoon Worcestershire sauce
Salt and pepper, to taste
For the Mashed Potatoes:
2 lbs Yukon Gold potatoes, peeled and cubed
1/2 cup milk
4 tablespoons butter
Salt and pepper, to taste
For the Sauce:
1 cup beef broth
1 tablespoon soy sauce
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
1 teaspoon dried herbs (like thyme or rosemary)
Salt and pepper, to taste
Instructions
Step 1: Prepare the Meatloaf
Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef, chopped onion, garlic, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix until well combined.
Form the mixture into a loaf shape and place it in a foil-lined baking dish or a metal tin.
Step 2: Bake the Meatloaf
Bake the meatloaf in the preheated oven for about 45 minutes, or until cooked through.
Step 3: Make the Mashed Potatoes
While the meatloaf is baking, boil the Yukon Gold potatoes in salted water until tender (about 15-20 minutes).
Drain and return the potatoes to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.
Step 4: Prepare the Sauce
In a saucepan, combine beef broth, soy sauce, dried herbs, salt, and pepper. Bring to a simmer.
Add the cornstarch mixture and stir until the sauce thickens. Remove from heat.
Step 5: Assemble the Dish
Once the meatloaf is done baking, spread the creamy mashed potatoes on top of the meatloaf.
Drizzle the prepared sauce over the entire dish, making sure to cover it well.
Step 6: Final Bake
Return the dish to the oven and bake for an additional 15-20 minutes, until the top is slightly golden and bubbly.
Step 7: Serve
Let it cool for a few minutes before cutting into it. Serve warm and enjoy!
Tips
Feel free to add shredded cheese on top of the mashed potatoes during the last few minutes of baking for a cheesy twist!
You can garnish with fresh herbs for added flavor and presentation.
