Garlic Parmesan Pork Chops with Cheesy Scalloped Potatoes
Ingredients:
For the Garlic Parmesan Pork Chops:
4 bone-in or boneless pork chops (about 1 inch thick)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
Optional: Fresh parsley for garnish
For the Cheesy Scalloped Potatoes:
4 large potatoes, thinly sliced (Yukon Gold or Russet)
1 cup heavy cream
1 cup milk
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon onion powder
Salt and pepper, to taste
Optional: Fresh chives or parsley for garnish
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Cheesy Scalloped Potatoes:
In a large bowl, mix together the heavy cream, milk, shredded cheddar cheese, grated Parmesan, minced garlic, onion powder, salt, and pepper.
Grease a 9×13 inch baking dish. Layer half of the sliced potatoes in the bottom, then pour half of the cheese mixture over them. Repeat with the remaining potatoes and cheese mixture.
Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the top is golden and bubbly.
Cook the Garlic Parmesan Pork Chops:
While the potatoes are baking, season the pork chops with garlic powder, Italian seasoning, salt, and pepper.
In a large skillet, heat the olive oil and butter over medium-high heat. Add the pork chops and sear for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 145°F or 63°C). In the last minute of cooking, add the minced garlic to the skillet and sauté until fragrant.
