Creamy Crack Chicken Bacon Gnocchi
Ingredients
1 lb gnocchi (store-bought or homemade)
2 chicken breasts, diced
6 slices bacon, cooked and crumbled
1 cup heavy cream
1 cup chicken broth
1 (8 oz) package cream cheese, softened
1 ½ cups shredded cheddar cheese
1 packet ranch seasoning mix
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions
Cook the Gnocchi: Bring a pot of salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside.
Cook the Chicken: In a large skillet, heat a bit of oil over medium heat. Add the diced chicken, season with salt and pepper, and cook for 6-7 minutes until fully cooked through. Remove and set aside.
Make the Sauce: In the same skillet, pour in the chicken broth and heavy cream, scraping up any browned bits. Add cream cheese and stir until melted and smooth.
Stir in shredded cheddar cheese and ranch seasoning, whisking until fully combined.
Assemble the Dish: Add the cooked chicken, crumbled bacon, and gnocchi into the creamy sauce, stirring gently to combine.
