Slow Cooker Chicken Cordon Bleu

Ingredients:

4 boneless, skinless chicken breasts
4 slices Swiss cheese
4 slices chicken ham (or turkey ham)
1 cup seasoned breadcrumbs
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup milk
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1 tablespoon Dijon mustard (optional)
Salt and pepper, to taste
1 tablespoon olive oil (optional for crisping)

Instructions:

Prepare the Chicken:

Slice a pocket into the side of each chicken breast. Stuff each pocket with 1 slice of Swiss cheese and 1 slice of chicken ham.
Coat the top of each stuffed chicken breast with seasoned breadcrumbs for added flavor and texture.
Assemble in the Slow Cooker:

Lightly grease the bottom of your slow cooker.
Place the stuffed chicken breasts inside the slow cooker, with the breadcrumb-coated side facing up.
Make the Sauce:

In a bowl, whisk together the cream of chicken soup, milk, Dijon mustard (if using), garlic powder, onion powder, black pepper, and a pinch of salt.
Pour the creamy sauce mixture over the chicken breasts.
Cook:

Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the chicken is cooked through and tender.
Optional Step: Crisp the Breadcrumbs:

For crispier breadcrumbs, transfer the cooked chicken breasts to a baking sheet and broil in the oven for 2-3 minutes until the tops are golden brown and crispy.
Serve:

Spoon some of the sauce from the slow cooker over each chicken breast when serving. Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
Notes:

For extra crispy breadcrumbs, don’t skip the broiling step.
Swiss cheese can be replaced with mozzarella or cheddar for a different flavor.
Feel free to adjust the seasoning to your taste, or add fresh herbs like parsley or thyme for an extra layer of flavor.
