Creamy Potato & Hamburger Soup

Ingredients:
Ground Beef: 1 lb, lean
Potatoes: 4-5 medium, peeled and diced
Onion: 1 medium, chopped
Carrots: 2 medium, diced
Celery: 2 stalks, diced
Garlic: 2 cloves, minced
Beef Broth: 4 cups
Milk or Half-and-Half: 1 ½ cups
Cream Cheese: 4 oz, softened
Cheddar Cheese: 1 cup, shredded
Butter: 2 tbsp
Flour: 3 tbsp (for thickening)
Salt and Pepper: to taste
Fresh Parsley or Green Onions (for garnish)
Directions:
1. Brown the Beef:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat and set the beef aside.
2. Sauté Vegetables:
In the same pot, add butter, onions, carrots, and celery. Sauté for about 5 minutes until softened.
Add minced garlic and cook for another minute.
3. Cook Potatoes:
Add diced potatoes, beef broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
4. Make the Creamy Base:
In a separate bowl, whisk together milk and flour until smooth. Slowly add this to the soup, stirring to combine.
Add softened cream cheese and shredded cheddar, stirring until melted and smooth.
5. Finish the Soup:
Add the browned ground beef back to the pot, stirring to combine. Let simmer for another 5-10 minutes, allowing flavors to meld.
6. Serve:
Ladle the soup into bowls and garnish with fresh parsley or green onions if desired.
