– 1 1/2 cups all-purpose flour
– 8 oz cream cheese, softened
– 1/4 cup sugar (for filling)
– 1 cup fresh strawberries, chopped
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
3. Stir in the melted butter.
4. Mix in the baking soda and salt.
5. Add the sugar, egg, vanilla extract, and cinnamon. Mix well.
6. Stir in the flour until just combined.
7. In another bowl, beat the softened cream cheese with 1/4 cup of sugar until creamy and smooth.
8. Fold the chopped strawberries into the banana bread batter.
9. Pour half of the banana batter into the loaf pan, then spread the cream cheese mixture over it. Pour the remaining banana batter on top.
10. Use a knife to swirl the layers a bit if desired.
11. Bake for 60-65 minutes or until a toothpick comes out clean.
12. Allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Tip: This banana bread is delicious warm or at room temperature, and it can be stored in an airtight container for several days!
