Bacon: 6 slices, cooked and crumbled
Onion: 1 small, diced
Garlic: 2 cloves, minced
BBQ Sauce: 1 cup (plus extra for drizzling)
Cream Cheese: 8 oz, softened
Cheddar Cheese: 2 cups, shredded
Pasta: 2 cups (elbow macaroni or rotini work well)
Beef Broth: 2 cups
Salt and Pepper: to taste
Green Onions: for garnish (optional)
Directions
Preheat Oven:
Preheat your oven to 350°F (175°C).
Cook Pasta:
In a large pot, bring water to a boil and cook the pasta according to package instructions. Drain and set aside.
Cook the Beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add the diced onion and minced garlic, cooking until the onion is translucent.
Mix Ingredients:
Reduce the heat to low, then stir in the softened cream cheese until melted and combined. Add the BBQ sauce, cooked pasta, and half of the shredded cheddar cheese. Mix until well combined and heated through. Season with salt and pepper to taste.
Transfer to Casserole Dish:
Pour the mixture into a greased 9×13-inch casserole dish. Sprinkle the remaining cheddar cheese and crumbled bacon evenly on top.
Bake:
Bake in the preheated oven for about 20-25 minutes, until the cheese is bubbly and golden.
Drizzle with BBQ Sauce:
Remove from the oven and drizzle with additional BBQ sauce if desired. Let it cool for a few minutes before serving.
Garnish:
Serve hot, garnished with chopped green onions if you like!
Tips:
For a spicier kick, add diced jalapeños to the beef mixture.
You can substitute ground turkey or chicken for a lighter option.
