Ingredients:
6 cups potatoes, peeled and diced
1 medium onion, chopped
2 cups chicken broth
1 (8 oz) package cream cheese, softened
1 cup shredded cheddar cheese
1 (10.5 oz) can cream of chicken soup
1 (1 oz) packet ranch seasoning mix
1/2 cup bacon, cooked and crumbled (plus extra for garnish)
Salt and pepper to taste
Green onions, chopped, for garnish
Directions:
Prep the Potatoes and Onion:
Place the diced potatoes and chopped onion in the crock pot.
Add the Liquids and Seasoning:
Add the chicken broth, cream of chicken soup, ranch seasoning mix, and half of the crumbled bacon to the crock pot.
Cook on Low:
Cover and cook on low for 6-7 hours or until the potatoes are tender.
Add the Cream Cheese and Cheese:
About 30 minutes before serving, add the softened cream cheese and shredded cheddar cheese. Stir until melted and creamy.
Season and Garnish:
