Kielbasa and Sauerkraut Soup – Hearty, Tangy, and Satisfying!

This Kielbasa and Sauerkraut Soup is the perfect comfort food for chilly days! With smoky sausage, tangy sauerkraut, and hearty potatoes, it’s a flavorful meal in a bowl that will warm your heart and soul.

Ingredients:

1 tbsp olive oil
1 lb kielbasa, sliced into rounds
1 onion, finely chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups water
2 large potatoes, peeled and diced
1 1/2 cups sauerkraut, drained
1 tsp smoked paprika
1/2 tsp caraway seeds (optional)
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish

Directions:

1. Sauté the Kielbasa and Aromatics:

Heat olive oil in a large pot over medium heat. Add kielbasa slices and cook until lightly browned.
Remove the kielbasa and set aside. In the same pot, sauté onion and garlic until fragrant and translucent, about 3-5 minutes.
2. Add Broth and Potatoes:

Pour in chicken broth and water. Add diced potatoes and bring to a boil. Reduce heat and simmer for 10-15 minutes, or until potatoes are tender.
3. Stir in Sauerkraut and Seasonings:

Add sauerkraut, smoked paprika, caraway seeds (if using), salt, and pepper. Stir to combine and simmer for another 10 minutes to blend flavors.
4. Return Kielbasa to the Pot:

Add the cooked kielbasa back into the soup and heat through for about 5 minutes.
5. Serve:

Ladle into bowls, garnish with fresh parsley, and serve with crusty bread for dipping.

This soup is simple, satisfying, and full of bold flavors—perfect for a cozy family dinner or meal prep for the week!
