Banana Bread Cinnamon Rolls
Ingredients
For the Dough:
• 2 cups all-purpose flour
• 1 packet (2 ¼ tsp) instant yeast
• 2 tbsp sugar
• ½ tsp salt
• 1 ripe banana, mashed
• ½ cup warm milk (or plant-based alternative)
• 3 tbsp melted butter
For the Filling:
• 2 tbsp melted butter
• ¼ cup brown sugar
• 1 tsp cinnamon
For the Glaze:
• ½ cup powdered sugar
• 1-2 tbsp milk
• ½ tsp vanilla extract
Instructions
1. Prepare the Dough:
In a bowl, combine flour, yeast, sugar, and salt. Add mashed banana, warm milk, and melted butter. Mix until a soft dough forms. Knead for 5-7 minutes until smooth. Cover and let rise for 1 hour.
2. Make the Filling:
In a small bowl, mix brown sugar and cinnamon.
3. Assemble the Rolls:
Roll out the dough into a rectangle. Brush with melted butter and sprinkle the cinnamon-sugar mixture evenly over the surface. Roll tightly into a log and cut into 8-10 pieces.
4. Second Rise:
Arrange the rolls in a greased baking dish. Cover and let rise for 30 minutes.
5. Bake:
Preheat oven to 350°F (175°C). Bake for 20-25 minutes or until golden brown.
6. Glaze:
In a bowl, mix powdered sugar, milk, and vanilla extract. Drizzle over warm cinnamon rolls.
