Honey and Mustard Pork Tenderloin: A Flavor Explosion in Every Bite!

Enjoy this succulent pork tenderloin enveloped in a glazed and aromatic honey and mustard sauce.

Ingredients:

– 1.2 kg pork tenderloin, trimmed

– 5 tablespoons acacia honey

– 3 tablespoons Dijon mustard

– 3 tablespoons whole-grain mustard

– 3 garlic cloves, finely chopped

– 2 tablespoons extra virgin olive oil

– 1 tablespoon fresh chopped thyme

– 1 teaspoon fresh chopped rosemary

– Zest of 1 lemon

– Sea salt and freshly ground black pepper to taste

– 2 tablespoons unsalted butter

  1. Preparation:

1. Preheat the oven to 190°C (375°F).

2. In a bowl, mix the honey, both mustards, chopped garlic, olive oil, thyme, rosemary, lemon zest, salt, and pepper until you have a smooth sauce.

3. Pat the tenderloin dry with paper towels and season generously with salt and pepper.

4. Heat a large oven-safe skillet over medium-high heat. Sear the tenderloin on all sides until golden brown (about 2-3 minutes per side).

5. Remove the skillet from the heat and brush the tenderloin with 2/3 of the honey and mustard mixture, ensuring it’s completely coated.

6. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 63°C (145°F). Baste the tenderloin with the pan juices halfway through cooking.

7. Remove the tenderloin from the oven and let it rest in the skillet, covered with aluminum foil, for 10 minutes.

8. Meanwhile, pour the remaining honey and mustard mixture into a small saucepan. Add the butter and heat over medium heat, stirring constantly, until the sauce is hot and glossy.

9. Slice the tenderloin into 1.5 cm thick slices and arrange them on a serving platter.

10. Drizzle the slices with the hot honey and mustard sauce just before serving.
