 Ingredients

1 lb ground beef or pork (or a mix)

1/2 lb chicken livers, finely chopped (optional, for authentic flavor)

1 small onion, diced

1 green bell pepper, diced

2 stalks celery, diced

3 cloves garlic, minced

2 cups cooked white rice

1 tsp Cajun seasoning

1/2 tsp smoked paprika

1/2 tsp dried thyme

Salt and black pepper to taste

2 tbsp vegetable oil or butter

1/4 cup chopped green onions (for garnish)

Directions

Cook the meat: Heat oil in a large skillet over medium heat. Add the ground meat and chicken livers (if using). Cook until browned, breaking it into small pieces as it cooks.
