Cheeseburger Soup
All the flavors of a classic cheeseburger in a warm, creamy soup! This hearty recipe is a family favorite that’s perfect for chilly days.
Ingredients:
1 lb ground beef
1 small onion, diced
2 carrots, peeled and shredded
2 celery stalks, diced
3 medium potatoes, peeled and cubed
4 cups chicken or beef broth
1 tsp garlic powder
1 tsp smoked paprika
1/4 cup all-purpose flour
2 cups milk
2 cups shredded cheddar cheese
1 cup heavy cream (optional for extra creaminess)
Salt and pepper, to taste
2 tbsp butter
Crumbled bacon and chopped green onions (for garnish)
Directions:
1 Cook the ground beef:
In a large pot, cook ground beef over medium heat until browned. Drain excess fat and set aside.
2 Sauté veggies:
In the same pot, melt butter and sauté onion, carrots, and celery until softened, about 5 minutes.
3 Simmer potatoes:
Add potatoes, chicken or beef broth, garlic powder, and smoked paprika. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
