Golden-Fried Bologna Sandwiches with Melted Cheese
Ingredients:
For the Sandwiches:
8 slices of thick-cut bologna
4 slices of white or brioche bread
4 slices of American or cheddar cheese
2 tablespoons unsalted butter
1 teaspoon mustard (optional)
1 teaspoon mayonnaise (optional)
Pickles or potato chips for serving (optional)
Directions:
Prepare the Ingredients: Lay out the slices of bread and spread a thin layer of mustard or mayonnaise (if using) on one side of each slice.
Fry the Bologna: Heat a non-stick skillet over medium heat. Add the slices of bologna and fry until the edges are crispy and browned, about 2-3 minutes per side. Remove from the skillet and set aside.
Assemble the Sandwich: Place one slice of cheese on top of one slice of bread, followed by two slices of fried bologna. Top with another slice of cheese and the second slice of bread (spread side in).
Cook the Sandwich: Melt 1 tablespoon of butter in the skillet over medium-low heat. Place the sandwich in the skillet and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side. Repeat for the second sandwich, adding more butter if needed.
Serve: Slice the sandwiches in half and serve warm with pickles or potato chips on the side.
