Cheesy Hamburger Potato Soup

Ingredients:

1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
4 cups potatoes, diced
4 cups beef broth
1 cup shredded cheddar cheese
1 cup heavy cream
2 tbsp all-purpose flour
2 tbsp butter
Salt and pepper to taste
Optional: Chopped green onions for garnish

Instructions:

In a large pot, cook the ground beef over medium heat until browned. Drain excess fat and set aside.

In the same pot, melt butter over medium heat. Add diced onion and minced garlic, sautéing until softened and fragrant (about 3-4 minutes).
Stir in the flour and cook for 1 minute to form a roux.

Gradually whisk in the beef broth, making sure there are no lumps. Add the diced potatoes and cooked ground beef.

Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the potatoes are tender.

Stir in the heavy cream and shredded cheddar cheese, allowing the cheese to melt completely. Season with salt and pepper to taste.

Serve hot and garnish with chopped green onions, if desired.
