Smoky Jalapeño Popper Meatloaf with Creamy Ranch Drizzle
This flavorful twist on classic meatloaf combines smoky spices, melty cheese, crispy bacon, and a kick of jalapeño heat, balanced with a creamy ranch drizzle.

For the Meatloaf:
1½ lbs ground beef
1 cup breadcrumbs
1 cup shredded cheddar cheese
4 oz cream cheese, softened
1–2 jalapeños, finely diced (remove seeds for less heat)
1 small onion, finely chopped
2 cloves garlic, minced
1 large egg
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp smoked paprika
Salt and freshly ground black pepper, to taste
4 strips bacon, cooked and crumbled
For the Creamy Ranch Drizzle:
1 cup ranch dressing
½ cup sour cream
1 tsp garlic powder
Salt and freshly ground black pepper, to taste
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or lightly grease a loaf pan.
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, breadcrumbs, shredded cheddar cheese, softened cream cheese, diced jalapeños, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, smoked paprika, salt, and pepper.
Mix until all ingredients are well incorporated.
Shape the Meatloaf:
Transfer the meat mixture to the prepared baking sheet or loaf pan.
Shape it into a loaf, ensuring it’s evenly formed for consistent cooking.
Bake:
Place the meatloaf in the preheated oven and bake for 45–50 minutes, or until the internal temperature reaches 160°F (71°C).
Prepare the Creamy Ranch Drizzle:
While the meatloaf is baking, in a medium bowl, whisk together the ranch dressing, sour cream, garlic powder, salt, and pepper until smooth.
Adjust seasoning to taste.
Refrigerate until ready to use.
Add Bacon Topping:
About 10 minutes before the meatloaf is done, sprinkle the crumbled bacon on top.
Return to the oven to finish cooking.
Rest and Serve:
Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
Drizzle the creamy ranch sauce over each slice before serving.
