Strawberry Cheesecake Eggroll Bites
These delightful Strawberry Cheesecake Eggroll Bites combine the creamy richness of cheesecake with the fresh sweetness of strawberries, all encased in a crispy eggroll wrapper. They’re perfect for sharing with loved ones over a cup of tea or coffee.
Ingredients:
8 ounces (225g) cream cheese, softened
1/2 cup (100g) granulated sugar
1 teaspoon vanilla extract
1 cup (150g) fresh strawberries, diced
12 eggroll wrappers
Water, for sealing wrappers
Oil, for frying
Confectioners’ sugar, for dusting
Directions:
Prepare the Filling:
In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
Gently fold in the diced strawberries until evenly distributed.
Assemble the Eggrolls:
Lay an eggroll wrapper on a clean, dry surface with one corner pointing toward you, forming a diamond shape.
Place about 2 tablespoons of the strawberry cheesecake filling in the center of the wrapper.
Dip your finger in water and moisten the edges of the wrapper.
Fold the bottom corner over the filling, then fold in the side corners, and roll up tightly, sealing the top corner. Ensure there are no gaps.
Fry the Eggrolls:
In a deep saucepan, heat oil to 350°F (175°C).
Carefully place a few eggrolls into the hot oil, seam side down.
Fry for 2-3 minutes per side, or until golden brown and crispy.
Remove and drain on paper towels.
Serve:
Allow the eggrolls to cool slightly.
Dust with confectioners’ sugar before serving.
