Ingredients

• 2 large chicken breasts (or thighs)
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon Italian seasoning
• 1/2 teaspoon paprika
• Salt and pepper, to taste
• 1 can (10.5 oz) cream of chicken soup
• 1 can (10.5 oz) cream of mushroom soup
• 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
• 1 block (8 oz) cream cheese, cubed
• 1 cup chicken broth
• 12 oz spaghetti, cooked and drained
• 1 1/2 cups shredded cheddar cheese

Instructions

1. Prepare the Crockpot Base:
• Place the chicken breasts in the bottom of your crockpot. Season with garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.

2. Add the Sauces:
• Pour in the cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, and chicken broth. Add the cream cheese cubes on top.

3. Cook the Chicken:
• Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and fully cooked.

4. Shred the Chicken:
• Remove the chicken from the crockpot, shred it with two forks, and return it to the pot. Stir well to combine.

5. Add the Spaghetti:
• Add the cooked spaghetti to the crockpot and mix until the pasta is well-coated in the sauce.

6. Add the Cheese:
• Stir in 1 cup of shredded cheddar cheese until melted. Sprinkle the remaining 1/2 cup on top, cover, and cook for an additional 10-15 minutes until bubbly.
