Black Pepper Chicken with Mushrooms

Ingredients:

2 boneless, skinless chicken breasts, sliced into thin strips
1 tablespoon cornstarch
1 teaspoon salt
½ teaspoon freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, sliced
2 cloves garlic, minced
1 cup mushrooms (shiitake or button), sliced
1 green bell pepper, sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
½ cup chicken broth

Instructions:

Marinate the Chicken:
In a bowl, combine the sliced chicken with cornstarch, salt, and black pepper. Mix well to ensure the chicken is evenly coated. Let it sit for about 10 minutes.

Prepare the Sauce:
In a small bowl, mix together the soy sauce, oyster sauce, sugar, and chicken broth. Set aside.

Stir-Fry the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken and stir-fry until it’s browned and cooked through, approximately 5–7 minutes. Remove the chicken from the skillet and set aside.

Sauté the Vegetables:
In the same skillet, add the remaining tablespoon of oil.
Add the sliced onion and minced garlic. Sauté for about 2 minutes until fragrant.
Introduce the sliced mushrooms and green bell pepper. Continue to cook for another 3–4 minutes until the vegetables are tender.

Combine and Simmer:
Return the cooked chicken to the skillet with the vegetables.
Pour in the prepared sauce. Stir well to combine all ingredients.
Let the mixture simmer for about 2–3 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Serve:
Transfer the Black Pepper Chicken with Mushrooms to a serving dish.
Garnish with chopped green onions or cilantro if desired.
Pair with steamed rice or noodles for a complete meal.
