Lemon Blueberry Bread

Ingredients:

1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
2 tbsp lemon juice
Zest of 1 lemon
1/2 cup sour cream
1 tsp vanilla extract
1 1/2 cups fresh blueberries (or frozen, thawed)
1 tbsp flour (for coating blueberries)

Preparation:

Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs, lemon juice, and lemon zest, mixing until smooth. Amish Peanut Butter Cream Pie
Add the dry ingredients to the wet ingredients alternately with sour cream, stirring until just combined.
Toss blueberries with 1 tablespoon of flour to coat, then gently fold them into the batter.
Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Enjoy!
