Golden Coconut Cream Pie

Ingredients:

2 cups coconut milk
1 cup sweetened coconut flakes
1/2 cup sugar
1/4 cup cornstarch
2 egg yolks
1 tsp vanilla extract
1/4 cup melted butter
1 1/2 cups crushed shortbread cookies

Instructions:

Preheat oven to 350°F (175°C) and lightly grease a baking dish.
Mix crushed shortbread cookies with melted butter and press into the dish.
In a saucepan, warm coconut milk and sugar over medium heat.
Whisk in cornstarch and egg yolks, stirring constantly until thick.
Remove from heat, add vanilla and coconut flakes, mixing well.
Pour mixture over crust and bake for 20 minutes. Amish Peanut Butter Cream Pie
Let cool, then refrigerate for at least 2 hours before serving.
Garnish with extra coconut flakes for a golden finish.
