Ingredients :
2 pounds ground pork
½ cup shredded parmesan
1 beaten egg
2 teaspoons salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
½ cup fine dry breadcrumbs
½ cup milk
¼ cup finely chopped onion
2 minced garlic cloves
⅓ cup honey
1 cup BBQ sauce
⅓ cup grape jelly
Instructions:
Preheat the oven to 350°F.
Mix the ground pork with the beaten egg, shredded parmesan, chopped parsley, salt, and black pepper until just combined.
In another bowl, mix the milk with the finely chopped onion, minced garlic, and breadcrumbs.
Combine the meat mixture and milk mixture together, without overworking it.
Shape the mixture into meatballs and arrange them in a greased 8-inch square baking pan.
Bake for 15 minutes or until the meatballs are crisp on the outside.
In a separate bowl, mix together the honey, BBQ sauce, and grape jelly.
Pour the BBQ sauce mixture over the meatballs.
Use foil to cover the baking dish and bake for another 15 minutes.
Ensure the meatballs reach an internal temperature of 165°F in the center to be fully cooked.
Storage Instructions:
Keep leftovers in an airtight container in the fridge and eat within a few days.
Variations and Substitutions:
Use beef in place of the pork if you prefer, or swap the grape jelly for apricot jelly. Also, you can use any kind of BBQ sauce. A smoky variety would be really good here.
