Copycat Taco Bell Chili Cheese Burrito

Copycat Taco Bell Chili Cheese Burrito – Just Like the Drive-Thru, But Better!

If you’re a fan of Taco Bell’s classic Chili Cheese Burrito (also known as the “Chilito” back in the day), you’ll fall in love with this homemade version. It’s got all the cheesy, beefy goodness you remember—only better. Why? Because it’s made fresh, freezer-friendly, and packed with flavor you can control.

 Ingredients (Makes 10 Burritos):

  • 1 lb (450g) ground beef (80/20 preferred for flavor)
  • 1 medium yellow onion, diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ cup water
  • 1 can (about 15 oz or 400g) refried beans
  • 2 cups shredded cheddar cheese (or cheddar-Jack blend)
  • 10 large flour tortillas (burrito-size)
  • Optional: diced jalapeños, taco sauce, or hot sauce for extra heat

Step-by-Step Instructions:

1. Cook the Beef and Onion:

In a large skillet over medium heat, add a splash of oil and cook the ground beef and diced onion together. Break up the meat as it cooks. Sauté until the beef is browned and onions are soft—about 7–10 minutes. Drain excess fat if needed.

2. Season the Meat:

Stir in chili powder, cumin, paprika, garlic powder, onion powder, and black pepper. Mix well, then add ½ cup water. Simmer for another 5 minutes, allowing the meat to soak up the spices and moisture.

3. Warm the Refried Beans:

While the meat simmers, warm the refried beans in a saucepan or microwave until smooth and spreadable.

4. Build the Burritos:

Slightly warm each tortilla to make it pliable. Spread 2 tablespoons of refried beans onto the center of the tortilla. Add 2–3 tablespoons of seasoned beef, then sprinkle a generous handful of shredded cheese over the top.

5. Roll It Up:

Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a burrito. Repeat with the remaining ingredients.

6. Serve or Freeze:

You can serve the burritos immediately, or wrap them in foil and freeze for later.

Freezer Instructions:

  1. To Freeze: Wrap each burrito in foil or plastic wrap and store in a freezer-safe bag.
  2. To Reheat: Microwave for 3–4 minutes (flipping halfway) or bake at 350°F (180°C) for 20–25 minutes until hot. Homemade Samoas Girl Scout Cookies
