If you think you don’t like Brussels sprouts, this “cracked out” version will change your mind. Tossed with ranch seasoning, smothered in a creamy cheese blend, and loaded with crispy bacon, these roasted Brussels sprouts are the perfect keto-friendly side dish or appetizer for any occasion.

 Ingredients

  • 1½ lbs (680 g) fresh Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp cream cheese, softened
  • 2 tbsp sour cream
  • Salt and black pepper, to taste
  • Optional: chopped green onions for garnish

 Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easier cleanup.

2. Season the Brussels Sprouts

In a large bowl, toss halved Brussels sprouts with olive oil, ranch seasoning, and a little salt and pepper. Coat evenly.

3. Roast Until Golden

Spread the sprouts in a single layer on the baking sheet. Roast for 20–25 minutes, stirring once halfway through, until tender and slightly crispy on the edges.

4. Make the Creamy Base

While the sprouts roast, mix the softened cream cheese and sour cream in a small bowl until smooth.

5. Coat and Combine

Once roasted, return the sprouts to the bowl. Toss with the cream cheese mixture until evenly coated. Stir in cheddar cheese and crumbled bacon.

6. Bake Again

Return everything to the baking sheet. Bake for another 5–7 minutes, or until the cheese is fully melted and bubbly. Potsticker Soup with Mushrooms Bok Choy
