Ingredients:
For the Sloppy Joe Mixture:
- 1 lb (450 g) ground beef (80/20)
- 1 medium onion, finely diced
- 3 garlic cloves, minced
- 1 cup tomato sauce (or ketchup)
- 2 tbsp tomato paste
- 1 tbsp mustard
- 1 tbsp brown sugar
- 1 tsp Worcestershire sauce (optional, but adds great flavor)

For the Mac & Cheese:
- 2 cups small pasta (like elbow or penne)
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk
- 2 cups shredded cheddar cheese (mixing cheeses is great too!)

To Serve:
- 4 to 6 large flour tortillas
- Butter for brushing (optional, for crisping)

Instructions:
1. Make the Sloppy Joe Mixture:
- In a large skillet, brown the ground beef until fully cooked and no longer pink.
- Add the diced onion and minced garlic, cooking until softened.
- Stir in the tomato sauce, tomato paste, brown sugar, mustard, Worcestershire sauce, salt, and pepper.
- Let the mixture simmer on low heat for about 10 minutes until it thickens and the flavors meld.
2. Make the Mac & Cheese:
- Cook the pasta according to package directions, then set aside.
