If you’ve never tried authentic Southern pralines, you’re in for a decadent treat. These rich, creamy candies are made with butter, sugar, and crunchy pecans — a melt-in-your-mouth Southern classic that’s perfect for the holidays, gift boxes, or anytime you need a little indulgence.

Ingredients:

  • 1 cup packed light brown sugar
  • 1 cup granulated white sugar
  • ½ cup evaporated milk
  • Pinch of salt
  • 4 tablespoons (½ stick) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups pecans, coarsely chopped

Instructions:

Step 1: Prep Your Tools

Line a baking sheet with parchment paper or a silicone mat. Have a wooden spoon or heatproof spatula ready, and work quickly once the mixture is ready to drop!

Step 2: Cook the Sugar Mixture

In a medium heavy-bottomed saucepan, combine brown sugar, white sugar, evaporated milk, butter, and salt.
Place over medium heat, stirring constantly with a wooden spoon until the sugar dissolves and the mixture starts bubbling.

Step 3: Watch the Temperature

Continue stirring and cooking the mixture until it reaches 235°F to 240°F (soft-ball stage) on a candy thermometer. This will take about 5 to 8 minutes. Don’t walk away — timing is everything with pralines!

Step 4: Add Flavor & Nuts

Once it hits the right temperature, remove from heat. Quickly stir in vanilla extract and chopped pecans.
Stir vigorously for about 1 minute, until the mixture thickens slightly and becomes creamy and opaque.

Step 5: Drop and Set

Using a spoon, drop small rounds of the praline mixture onto your prepared baking sheet. Work fast — the candy sets quickly as it cools.
Let them cool completely for about 30–45 minutes at room temperature until they are firm and dry to the touch.

Pro Tips:

  • Toasting pecans before adding them enhances their flavor. Toast them in a dry skillet for 4–5 minutes or in a 350°F oven for 7 minutes.
  • If your pralines are too soft, your mixture may not have reached the right temperature. Too dry? You might’ve cooked it a little too long.
