Ingredients (Serves 6-8)

  • 2 cans (15 oz each) sweet corn, drained
  • 1 can (15 oz) creamed corn
  • 8 oz cream cheese, softened

  • ½ cup granulated sugar (optional, adjust to taste)
  • ½ cup whole milk
  • 2 large eggs, beaten
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar cheese (optional, for topping)
  • ¼ cup chopped fresh parsley (for garnish)

Instructions

1. Prepare the Slow Cooker

  1. Grease the slow cooker with butter or nonstick cooking spray.
  2. Set it to Low heat if it has adjustable settings.

2. Mix Wet Ingredients

  1. In a large bowl, combine cream cheese and melted butter.
  2. Whisk until smooth and creamy.
  3. Gradually add beaten eggs, mixing continuously.
  4. Slowly stir in milk until fully incorporated.

3. Combine Dry Ingredients

  1. In another bowl, mix flour, baking powder, salt, and black pepper.
  2. Gradually add dry ingredients to the creamy mixture, stirring until fully blended.

4. Add Corn

  1. Stir in sweet corn and creamed corn gently.
  2. Ensure the corn is evenly distributed throughout the mixture.

5. Cook in Slow Cooker

  1. Pour the mixture into the prepared slow cooker.
  2. Cover and cook on Low for 4-5 hours, or until the casserole is set and fragrant.
  3. Optional: About 1 hour before the end, sprinkle shredded cheddar on top for a golden, melty finish.

6. Serve
