Ingredients
For the potatoes:
- 1½ pounds baby potatoes, cut into halves or quarters
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika (optional, for extra flavor)
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
For the steak bites:
- 1½ pounds sirloin steak, cut into bite-sized cubes
- Salt and pepper, to taste
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (for garnish)
- Optional: ½ teaspoon crushed red pepper flakes for a little heat
Instructions
1. Prepare the potatoes
Start by washing the baby potatoes and cutting them in half (or quarters if large). In a large skillet or cast-iron pan, heat the olive oil over medium-high heat. Add the potatoes, sprinkle with smoked paprika, garlic powder, salt, and pepper. Stir well to coat each piece.
Cook the potatoes for about 12–15 minutes, stirring occasionally, until they become golden and crispy on the outside and soft on the inside. Remove them from the skillet and set aside on a plate.
2. Sear the steak bites
Pat the steak pieces dry with paper towels to help them brown nicely. Season generously with salt and black pepper. In the same skillet, melt 1 tablespoon of butter over medium-high heat.
Add the steak bites in a single layer (do this in batches if necessary) and sear for 2–3 minutes per side, until browned and cooked to your liking. Avoid overcrowding the pan, as that will steam the steak instead of searing it.
3. Add the garlic butter
Once the steak bites are cooked, reduce the heat to medium. Add the remaining 1 tablespoon of butter to the skillet along with the minced garlic. Stir constantly for about 30 seconds, until fragrant and lightly golden (don’t burn the garlic!).
Then return the cooked potatoes to the skillet and toss everything together until coated in the buttery garlic sauce.
4. Finish and serve
Sprinkle with chopped parsley and, if desired, a pinch of crushed red pepper flakes for some spice. Serve immediately while hot — the buttery garlic aroma and crispy textures are simply irresistible!
Tips for Perfect Steak Bites
- Use high heat: This ensures the steak gets that delicious caramelized crust.
- Don’t overcrowd the pan: Sear in batches if needed to maintain that perfect browning.
- Add herbs: You can toss in a sprig of rosemary or thyme while cooking for extra aroma.
- Steak options: Sirloin, ribeye, or tenderloin work best because they’re tender and juicy.
Serving Ideas
- Serve with a fresh green salad, grilled vegetables, or garlic bread.
- Drizzle a bit of lemon juice over the top for brightness.
- Turn it into a hearty meal bowl by adding sautéed mushrooms or caramelized onions.
