Summer Frito Salad
Someone posted the other day about ranch-style beans and what to do with them. This is a salad my Granny made for every summer get-together. I don’t remember what she called it, so I call it the Summer Frito Salad.
Ingredients:
1 head of iceberg lettuce, chopped/shredded
1 can of ranch-style beans, drained
About a handful of diced tomatoes
About a handful of shredded cheese
Chopped onion (optional)
1 bag of Fritos, crushed (not the party size bag, the regular bag)
Little more than half a bottle of French dressing (or creamy French/Catalina)
Directions:
Prep the Lettuce:
Chop or shred 1 head of iceberg lettuce and place it in a large bowl.
Add Beans and Veggies:
Drain 1 can of ranch-style beans and add to the lettuce.
Add a handful of diced tomatoes and a handful of shredded cheese.
If you like, add chopped onion. (I skip this because I don’t like raw onion.)
Add Fritos:
Crush 1 bag of Fritos and add to the mix.
Dress and Mix:
Pour a little more than half a bottle of French dressing over the salad. (You can also use creamy French or Catalina.)
Mix everything together until well combined.
Serve Immediately:
Enjoy your salad right away! It doesn’t store well, so eat it up!
Chef’s Tip:
This salad is the perfect mix of sweet, savory, salty, and crunchy. It’s great for summer when you don’t want to heat the house with the oven. My aunt uses ranch dressing, but I prefer the sweet and tangy flavor of French dressing.
