Fried Spring Rolls with Ground Beef Filling

Ingredients

For the Spring Rolls:

1 lb ground beef
2 tablespoons vegetable oil
2 cloves garlic, minced
1 small onion, finely chopped
1 cup shredded cabbage
1 carrot, grated
2 tablespoons soy sauce
1 teaspoon ground black pepper
1 teaspoon sesame oil (optional)
1 package spring roll wrappers (about 20-25)

For Frying:

Vegetable oil (for deep frying)

Instructions

Prepare the Filling:
In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
Stir in the shredded cabbage, grated carrot, soy sauce, black pepper, and sesame oil (if using). Cook for an additional 3-5 minutes until the vegetables are tender. Remove from heat and let cool slightly.

Assemble the Spring Rolls:
Lay a spring roll wrapper on a clean, dry surface with one corner pointing towards you. Place about 2 tablespoons of the beef filling near the corner closest to you.
Fold the corner over the filling, then fold in the sides. Roll tightly away from you, sealing the edge with a little water. Repeat with remaining wrappers and filling.

Heat the Oil:
In a deep frying pan or wok, heat vegetable oil over medium-high heat until hot (around 350°F/175°C). You can test the oil by dropping in a small piece of wrapper; it should sizzle immediately.

Fry the Spring Rolls:
Carefully place a few spring rolls into the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Serve:
Arrange the fried spring rolls on a serving platter, cut in half to showcase the filling. Serve with dipping sauce (like sweet chili sauce or soy sauce) if desired.

Additional Notes

For the fish filling, you can add small pieces of cooked fish to the beef filling or use separate wrappers to create a fish spring roll.
If serving alongside a meat dish (like whole chicken legs), prepare the chicken separately and serve together for a delightful meal.

Arrange on a simple white paper backdrop for a clean look.
