French Onion Pork Chops

Ingredients:

3 tablespoons butter
2 yellow onions, thinly sliced
1 cup beef broth, divided
4 boneless pork chops
2 tablespoons extra-virgin olive oil
1 teaspoon salt
¼ teaspoon pepper
1 teaspoon Italian seasoning
3 tablespoons all-purpose flour
2 cups shredded Gruyere cheese
Parsley, for garnish

Directions:

Preheat your oven to 425°F.
In a large oven-safe skillet, melt butter over medium-high heat. Add the onions and half the beef broth. Cook for 15-20 minutes until the onions are browned and tender. Transfer the onions to a bowl and cover to keep warm.
In a small bowl, mix olive oil, salt, pepper, and Italian seasoning. Rub this mixture over both sides of the pork chops.
Using the same skillet, add the pork chops and sear for 3-5 minutes on each side until well browned. Remove the chops and set aside.
Return the onions to the skillet. In another small bowl, whisk together the remaining beef broth and flour. Pour this into the skillet, stirring the onions as the sauce thickens and reaches a gentle boil.
Add the pork chops back to the skillet and top with shredded Gruyere cheese.
Transfer the skillet to the oven and bake for 5-10 minutes, or until the cheese is melted and bubbly. Ensure the pork reaches an internal temperature of 145°F.
Remove from the oven, spoon the flavorful onion mixture over the pork chops, garnish with parsley, and serve immediately.
