Crockpot Cheeseburger Soup

Warm up with this hearty and creamy Crockpot Cheeseburger Soup, combining all the flavors of a classic cheeseburger into a comforting bowl. Perfect for chilly days and sure to be a family favorite!

Ingredients:

1 pound ground beef
4 cups potatoes, peeled and diced
1 small onion, diced
2 cloves garlic, minced
1 cup carrots, diced
4 cups chicken broth
1 teaspoon dried basil
1 teaspoon dried parsley
Salt and freshly ground black pepper, to taste
1/4 cup all-purpose flour
2 cups milk
2 cups shredded cheddar cheese
1/2 cup sour cream

Instructions:

 

Brown the Ground Beef:

In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Combine Ingredients in Crockpot:

Transfer the cooked ground beef to a 6-quart crockpot.
Add the diced potatoes, onion, garlic, carrots, chicken broth, dried basil, dried parsley, salt, and pepper. Stir to combine.
Cook:

Cover the crockpot with the lid and cook on low for 6–8 hours, or until the potatoes are tender.
Prepare the Cheese Mixture:

About 30 minutes before serving, in a medium saucepan over medium heat, melt 1/4 cup butter.
Whisk in the flour and cook for 1–2 minutes until bubbly.
Gradually whisk in the milk, stirring constantly until the mixture thickens.
Remove from heat and stir in the shredded cheddar cheese until melted and smooth.
Combine and Serve:

Pour the cheese mixture into the crockpot and stir to combine.
Stir in the sour cream until fully incorporated.
Cover and cook on low for an additional 15–20 minutes until heated through.
Serve hot, garnished with additional shredded cheese or chopped green onions if desired.
