 Ingredients

  • 1 lb beef stew meat, cut into bite-size pieces
  • 2 tablespoons oil (vegetable or olive oil)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth (low sodium preferred)
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups mixed vegetables (carrots, peas, corn, green beans)
  • Salt and black pepper, to taste

Optional (but highly recommended for extra flavor):

  • 1 teaspoon paprika
  • ½ teaspoon dried thyme or Italian seasoning
  • 1 bay leaf

 Instructions

  1. Brown the Beef
Heat the oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat in batches and sear until browned on all sides. This step builds deep, rich flavor. Remove the beef and set aside.
  2. Sauté the Aromatics
In the same pot, add the chopped onion. Cook for 3–4 minutes until soft and slightly golden. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Build the Soup Base
Return the beef to the pot. Pour in the beef broth and add the diced tomatoes (with their juice). Stir well, scraping the bottom of the pot to release all the browned bits.
  4. Season and Simmer
Add salt, black pepper, paprika, thyme, and bay leaf if using. Bring the soup to a gentle boil, then reduce the heat to low. Cover and let it simmer for 40–50 minutes, until the beef is tender.
  5. Add the Vegetables
Stir in the mixed vegetables. Cover again and simmer for another 10–15 minutes, until the vegetables are cooked but still vibrant.
  6. Final Taste Check
Remove the bay leaf. Taste and adjust seasoning with more salt or pepper if needed.
