Magic Lemon Cobbler
A refreshing and zesty lemon cobbler that magically forms layers while baking, creating a delightful mix of gooey lemon filling and a golden crust. Perfect for a tangy, sweet dessert!
Ingredients:
1 stick (1/2 cup) unsalted butter
1 cup all-purpose flour
1 ½ teaspoons baking powder
1 cup granulated sugar
1 cup milk
1 teaspoon vanilla extract
1 can (15.75 oz) lemon pie filling
1 tablespoon lemon juice (optional, for extra tang)
Powdered sugar, for dusting (optional)
Directions:
Preheat oven to 350°F (175°C). Place the stick of butter in a 9×13-inch baking dish and melt it in the oven while it preheats.
In a medium mixing bowl, whisk together the flour, baking powder, and sugar.
Gradually whisk in the milk and vanilla extract until the batter is smooth.
Assemble the Cobbler: Once the butter is melted, remove the baking dish from the oven. Pour the batter over the melted butter, but do not stir. Spoon the lemon pie filling evenly over the batter. If you prefer more tartness, drizzle lemon juice over the filling. Again, do not stir—let the magic happen in the oven!
Bake: Bake for 40-45 minutes, or until the top is golden brown and the edges are bubbly.
Cool and Serve: Allow the cobbler to cool slightly before serving. Optionally, dust with powdered sugar for a sweet finishing touch.
